Blueberry and Banana Quinoa Muffins

Blueberry Banana Quinoa Muffins

Makes: 12 muffins

  • 1⅓ cup quinoa flour
  • 1 tsp baking powder
  • 2 ripe bananas, mashed
  • ½ cup brown sugar
  • 2 eggs
  • 2 tbl coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup quinoa, cooked
  • 1 cup frozen blueberries
  1. Preheat oven to 375 degrees.
  2. Mix quinoa flour and baking powder in a small bowl and set aside.
  3. In a large mixing bowl, mix bananas, brown sugar, eggs, vanilla, and coconut oil.
  4. Slowly mix in the flour and baking powder into the wet mix.
  5. Add the cooked quinoa and blueberries and stir.
  6. Pour batter into muffin tin
  7. Bake for 25 minutes
